Computational Approaches to Support Protein Fish By-Products Valorisation to Produce Bioactive Peptides
Short Introductive summary
Within the VALORISH project, IDENER developed a computational framework to valorise protein-rich by-products from the fishing industry by identifying bacteria capable of converting fish-derived proteins into bioactive peptides. This in silico protocol integrates enzymatic digestion simulations, genome-scale metabolic modelling, and bioactivity inference to predict both the proteolytic efficiency and functional potential of microbial strains. Applied to 81 EFSA-approved bacteria and eight protein substrates from shrimp, hake, and cod, the workflow enabled the selection of 17 promising strains for experimental validation. This approach illustrates how computational biology can accelerate the design of sustainable bioprocesses for transforming fish waste into high-value bioactive compounds, contributing to circular and zero-waste bioeconomy goals.
